Shengjian is a local traditional snack in Shanghai, also known as Shengjianbao or Shengjian Mantou. Most of the traditional pan-fries come from small street shops and are fried in large iron pans. The skin is white and soft, the bottom is burnt and crispy, sprinkled with sesame seeds and chives before serving, it has a small taste and little soup. Later, with the diversification of the production process, another kind of pan-fried bun appeared. The skin is thin and the bottom is not burnt, the soup is rich, and the meat filling is firm and elastic.
